About Me

My photo
I am 45. I am married to the love of my life. Together we have two beautiful young adults who bring me joy everyday. In 2015 we added another beautiful young adult to our house, our niece, and she has been a great joy! Secretly, I'm counting the years till grandbabies start coming; they just need to find their forever loves first.

Evil Cold

It has been wickedly cold here the last few days. We're talking -22/24 every morning without any help from a wind chill. It gets up to a high of about -4....then plummets back down to -15.

It evidently warmed up yesterday, although it didn't actually feel like it. We had snow last night. I don't know how much, I haven't looked out the window, but the flakes were big.

Today Tony and I are having our day out without any rugrats. We are going to Minocqua for the day. I'm thinking I'm NOT wearing the heels I wore yesterday. Those shoes were definitely not made for walking....pardon the pun! I would really like to not get frostbitten today. I'm not sure how much I'm going to enjoy freezing my toukus off. Gosh I'm a complainer.

I'm going to enjoy my day out with Tony...1) because he's been gone for a week. 2) because he is giving me this day because its what I asked for for Christmas 3) because we are going to go to the chef stores and drool! not over food, mind you, over appliances and gadgets! 4) because he is taking me to this really cute german pub downtown and 5) just because its me and him!

Now, in my mind, I've built this up to be a really romantic-ish day with lots of 'couple' behaviors and snuggly stuff.....my biggest fear is that my reality is going to be vastly different from my dream. Probably because even though this is my Christmas present...I'm the one that has decided everything. Picked the activity, picked the restaurant, picked it all....now we'll see if he does anything that is a surprise. That would be a small miracle in itself. I know, shut up Biz! Quit your complaining and whining, even if it is true, start believing differently and things will change.

I love my husband intensely. I have learned to overlook many things. Most of the time it doesn't even bother me that he does nothing to surprise me except maybe once every other year or so. I guess just once in a while, I would like for something to happen that I didn't have once ounce of knowledge, say so, or preparation for.

Here's my one wish. I would like a carnation today. They are my favorite flower and it would make me very happy.

Ok...geez...I have to stop being such an ungreatful rag....I don't even know why I'm telling you this.

talk to you later

Chicken Chili (2 Weight Watchers Pts/Cup)

I make this awesome chicken chili. I got the recipe at a Weight Watchers meeting months ago. I've probably made it about 5 times since then. My family LOVES it! I have modified the recipe as I felt like the original was just too watery. It is made in a smaller batch and is still the 2 points per cup that it was before.

Chicken Chili:
2 WW points per cup
Makes 14 Cups

3 large chicken breasts- boiled and shredded
3 cans Great Northern Beans - (Bush's has no fat) (original recipe calls for 7 cans)
1 16 oz jar Pace Picante sauce (original recipe calls for 2 bottles)
2 Tbsp Chili powder
1 Tbsp Cumin
1 Med onion- diced
3 cloves garlic
4 Cups water (original recipe calls for 6 cups)

I usually boil my chicken and while its boiling I assemble the rest in my crockpot. I shred the chicken taking off all the gross pieces. Put the chicken in the pot, put it on high and let it cook for about 5-6 hours. You can't really over cook this soup.

We serve it with Non fat sour cream, 2% cheese and crushed tortilla chips. Make sure you watch your portion sizes on these and remember to add whatever extra points you put into your soup. Another really great add in would be jalepenos....

The reality factor....

....I have a dog that came home from the kennel two weekends ago with 'kennel cough'. Despite the fact that he is currently on meds and has been vaccinated against further contamination...he still has to get over this bout. He has good days and bad days...today is a bad day...he has been gagging and anointing all of my non-carpeted rooms with vomit.

....I am eating a part of a breast from last night's roasted chicken even though weigh in is a mere 1.25 hours from now!

...I have become deathly sick twice in the last two days from overconsumption of sugary foods. I think I hate sugar....and the foods that make me eat it!

....I have been COMPLETELY unproductive in the crafty part of life. I have only knit a portion of one sock....a sock I can't even take a picture of to show you because of my inability to grab the darn memory card out of my printer at work. Camera's at home...need I say more?

....Tony is in Michigan for ANOTHER week of work....I miss him terribly. But I refuse to let this particular week defeat me. This is the ongoing saga...
week one(September): did great, didn't even miss him till he was almost home....
week two(October): terrible beginning of the week...great ending....
week three(November): depressed...ate like a pig....depressed.....
week four(January): so far ok. sad when he left, first day was bad, I didn't even shower....second day is so far quite good, i even exercised! Eating smart and planning on doing a bang up job teaching at tonight's weight class at church. I even have all of my meals planned out for the entire week (these things just don't happen, people) but I still can't wait for him to be home!

....Triumph! I did NOT sit at my computer at work today and play various forms of computer solitaire! I sat and read other people's blogs instead!

....I am rather disgusted with people that fill their blogs up with profanity and rude and distasteful behavior.....You are right, I don't have to read it....You are even more right, it is their right to do what they want on their blog, same as it's my right....but come ON...have some pride, people! Have some integrity, have some decency, have something worth reading!

....I made Chicken Chili tonight and it bangs out at 2 Weight Watchers points per serving! Can't wait to eat it...but I didn't leave it on a high enough heat when I went to work today, so my onions are still crunchy. Um, no. There will be no crunchy onion consumption. Ick. So now it is on high and will require another hour or so of cooking. I have put the recipe in another entry...it's available in my new recipe section to the right------->

Ok I'm done. I could rag on about how I feel fat and the new contacts that my optometrist is having me try out really suck...but I won't do that...you can read that on any other blog...but not mine.

; )

I love my kids, but...

...just...some days....WOW.....

Who knew you could ride two on an eliptical??

Just Gotta Brag!

I gotta brag on my daughter just a little bit! She competed in her first ever Powerlifting competition this last Saturday. She is one of three of the youngest girls on her team. They let them start at 7th grade level as long as they have an older sibling/relative in powerlifting. Her cousin Cory is a Senior on the team, so she joined.
She did AWESOME!

Here she is with the squat: Her highest squat was 160 lbs, missing only one of her attempts at 170. She lost her balance.

Next is the bench: Her highest bench was 75 lbs. She made all three benches and feels like bench is her strongest event.

Last is the dead lift: Her highest lift was 190 lbs. She missed it on her first attempt because she felt a pinching in her back and didn't feel comfortable. I would much rather her miss an attempt than injure herself. She nailed the 190 lift on her last attempt with no problem. She could have made the 200 lift that would have been her last attempt with no problem either, but she has next time! And that one is the home meet where she can show off! :)

Stefani is here with the other two 7th grade girls Hannah (far left), and Morgan (center right). Center left of the picture is Alexa, who took first place for dead lift and (I think) squat for 105lb girls at World Powerlifting competition in France last year! Go figure!

Stefani and Alexa are the only two that I'm sure took first in their weight classes...I can't remember how Hannah and Morgan did...they probably took first too...??

A little info about cousin Cory: Here he is squatting 490 lbs or something like that. On each of his first attempts he qualified for the state competition. With his actual total for the day he also qualified for nationals. Yay, Cory! His total pounds for the day were over 1100 lbs.....

He took first too....surprised? lol

And now, I will leave you with a bit of gratuitous cuteness named Jake.....

Yo! What up dawg!

Sneak Peek!

Ok believe it or not some of the pictures you are going to see are the very best pics I could get of the items. These are all my own patterns that I will be sharing with you very shortly.

Let's start with Charizard! Another Pokemon creation.

Front view.....

Side view.....
and, Yes, I was thoroughly exhausted by the time I was done with him. I believe he stands about 11 or so inches tall.

Next, we have Lizzie modeling the miniature people, horse and dragon that go in the castle bag.

In that smashed mess is a Princess(far right), a Prince(center right), a steed (center left) and a dragon(far left). The Prince and Princess DO fit the steed, only not at the same time. If he wants to save her from the tower he's gonna have to hitch a wagon onto the horse and throw her in it....

Castle bag...complete with draw bridge (which I did NOT get a picture of, but you can see it tied up).

And Last, but not least, Grumpy Jones (a.k.a. Josey) with the car garage.

It is all crocheted and then applied to pieces of plastic canvas cut to fit. It has '3D' appliques all around the outside of it and as you can see in the next picture, it opens up on one side and houses 3 fat, little cars....perfect for toddlers.

I loved making all these gifts...they made my arms want to fall off, but it was so FUN to be that creative!!
I can't wait to share the patterns with you...I promise it will be soon...and, as always, they will be FREE!

Tah!

Wow....

....I just realized what a disgusting lack of blogging there has been from me.

December was literally so full of knitting and crocheting that my ability to type was completely hindered. Even if I had had the time to do it, I wouldn't have had any strength in my arms!

The remainder of things that I finished were a castle with princess/prince/dragon/steed for my niece and the horse purse I talked about last time. I made a car garage with little fat cars for my nephew and a couple of pairs of socks...and I forget what the rest was. All I know is that I failed in my attempt to make socks for everyone for Christmas. I am in the process of finishing those up. And I refuse to allow myself to do anything else until they are done!

Oh! I made a Charizard for my other nephew...turned out FANTABULOUS! Couldn't be happier.

If my camera were present, I would give you some sneak peaks. I have some absolutely adorable free toy patterns that I will be posting as soon as I have the time and energy to do it!

Right now I'm so busy 'losing weight' that I don't have alot of time to think about anything but food.....like seafood sandwiches (10 ridiculous points) and apple crisp and soups and breads...all very high in fat and not what I should be eating....but what my flesh is longing for....

*sigh*

Thank you God for the strength to not run next door and get some cheese curds!
