South Western Baked Goulash

Southwestern Baked Goulash

Ingredients:
1 lb ground beef
1/2 large onion chopped
1/2 Tbl Cumin
salt and pepper
1 can tomatoes/green chilis (Rotel type product) ,drained
1 can southwest style corn, drained
8 oz uncooked elbow mac
8 oz or more of shredded cheddar
8x11 or 9x13 pan

Preheat oven to 375.

Brown meat and onion and spices (salt and pepper to taste). Cook pasta while meat is cooking. When meat is cooked and onions are soft, add tomatoes/chili mix and corn to meat. Add about 1/3 of cheese to mixture. Drain noodles and add to mixture. Place in casserole dish, top with the remaining cheese and cook for about 25 minutes.

  1. Oh, this sounds so yummy! Just went grocery shopping last night, now we must wait til the next trip there to pick up the ingredients which are not in the cupboard. bummer!!!

    This recipe sounds wonderful. My hubby doesn't like corn mixed into a dish. To Bad! LOL
    I am no dairy, but I think it will be great even without the cheese.

    Keep those great recipes coming.

    I also am addicted to yarn. I have more yarn then anyone should ever have. I used to work for a couple of craft stores, and when they discontinued a yarn, I bought it all.
